I used oscilloscope to measure voltages and got data from two channels, each channel has time data and values data. now, I want to calculate magnitude and angle as ( A ∠±θ ) for each channel and magnitude and phase shift between two voltage channels as ( A ∠±θ ) by using MATLAB.

From the principle point of view you can define magnitude A and phase phi for sinusoidal signals according to functional expressions:
x(t)= A sin (wt + phi1),
where x(t) is the sine wave, w is its angular frequency t the time amd phi is the phase angle. The phase angle itself is the phase shift against specific reference sine wave r(t)= R sin wt. having the same frequency and reference phase zero.
Then for a second sine wave y(t) one can write:
y(t)= B sin (wt + phi2) also relative to the reference r(t).
then conceptually you have to define a reference r in order to get phi1 and phi2.
As for the amplitudes you can get them directly by calculating the peak values of the sine waves. Afterwards you can calculate the phase angle phi= phi2-phi1 and the ratio of the magnitudes between B/A.
All you need is to display the waveforms in same diagram.

My data (voltages) was recorded from oscilloscope by channels. therefore, each channel consists of time data and value. now, how could I obtain magnitude, phase angle and phase shift from recorded data for each channel by using MATLAB.
