In most cases you'll haven't any visible characters, but biochemical (presence of inhibitors etc.). Only one morphlolgical trait can be used as indirect indicator of dormacy - thick seed coat. But in most cases physiological dormacy discovered in experimental way, because there are a lot mechanisms relaesing it.

Seeds react and adjust changes in their dormancy depending in seasonal condition, please see Baskin and Baskin 2004, dormancy classification etc.
