When using piezoelectric as sensor, we say electrons are in its surface.
For an electroded surface, the electric charges do balance themselves so that an equipotential surface is obtained.

When you use a piezo as sensor, you create an electric displacement when faces are connected. this displacement can be measured using an ampere meter for example. It behaves as a generator.
When faces are not connected, you observe an electric field.
