Is there a way to search in the Acknowledgements field of “all” published scientific papers? I can’t find such a delimiter in Web of Science (but maybe I just don’t know where to find it). Do you know of any other database / search engine that will let me do this?
I'm looking to quantify the use of various words and phrases.

Acknowledgements usually refer to funding agencies for grants supporting the research (NOT ALWAYS), a partial answer to your problem is to search in the Science Citation Index database in the "funding' functions on the left of the retrieval set. This will give you most of the acknowledgements appearing in the papers published in a specific field.
Some journals have this section electronically delimited, but most do not. Assuming that there is an established sequence of elements and fixed headers, such as "Acknowledgements" and "References" or "Bibliography", you could us a simple script to extract text from pdf or html files and then remove all text before and including "Acknowledgements" and after and including "References" or "Bibliography". This might be cumbersome but should work if you do a statistically random sampling of, e.g. 1000 papers across your fields and journals of interest (instead of sampling all publications).

The best option, and that´s what i did, is look for it directly in the text, meaning one by one. In my case, were around 600 documents with which I work, a bit problematic at the beginning, but ones you develop the "eye" to identify places in to the document the Acknowledgements are (depending the journal and the publication moment) the process become more efficient

Citation itself is an acknowledgement to the earlier papers. In web of science there is a tag c1 which lists the papers cited

Citation to a paper is not an acknowledgement in the way we know it. The citation acknowledges earlier work on a subject but it is not referred to as an acknowledgement, which is a mention of the body that supported the study, rather than a citation to the study.
Try both spellings and boilerplate text. Today I get 1350 and 73 for the following searches
