I almost finished a book chapter about my resent research (modeling of solid biomass combustion using OpenFOAM) and I want to publish it. In the case of a paper the procedure consists of sending it to a journal, but, how is the process for a book chapter? where I should send the manuscript?

Do you intend to write an entire book? Do you hope for this to be accomplished through a traditional publisher (e.g., McGraw-Hill or Springer-Verlag or CRC Press)? Unless you intend to self-publish, you will probably need an agent and a lot of money or be astonishingly lucky to get an offer from a publisher.
To publish a chapter of a book, you must look for a publishing house that publishes thematic books on the topic of the chapter and submit your text to see if it is acceptable.
You can also search for other authors who are interested in publishing a book with you on the topic of the chapter you want to publish and see if the book proposal is acceptable to the publisher's house.
Try Amazon. Download its Kindle application and follow the instructions.
If you go with Amazon Kindle, there is an option to publish one chapter at a time called Kindle Vella. The details are at the top of the page after you log in. It's intended for fiction but would work for other subjects. I have published 81 books on Amazon (62 of my own + 19 for friends and family). It's a good option.
I have published several books and guides about thecnical issues related with fluids flow and the use of Kindle is very easy.
