I made an electro-thermal analysis using the ِANSYS Workbench of the cathode used in the aluminum reduction cells. What I want to ask is how do I draw a graph like attachment to the cathode surface. In other words, how can I get the values of certain places on any surface through the program ANSYS to draw a similar graph.

As far as I understood, you want to extract the results from certain part of the geometry in ANSYS Workbench. The best method for extracting results is selecting nodes in the area that you are interested in as named selection and once you want to extract the results (Current Density), set the scoping method to "Named Selection" and Set the "Geometry" to the name selection you already created.
Even if you want to extract the results from a surface, ANSYS grab the nodes located on that surface and extract the results from them in order to provide the results.
Also, you can define "Construction Geometry" such as "Path", "Surface" and "Solid" for extracting the results.
