I need to make a starch solution for an alpha amylase anzyme inhibition assay and our model study says they used 0.1g pf potato starch in 100 ml of 16 mM of sodium acetate buffer. How do I make the 16mM of sodium acetate buffer?

You will need sodium acetate and glacial acetic acid. Next, you must decide what pH you want the buffer to be.

Be sure to wear personal protective equipment when handling the acid.
It would be a good idea to check the pH using a calibrated pH meter, and adjust the pH, if necessary, using HCl or NaOH.
