I have to transport fresh vegetable matter for enzymes and phytohormones assay and gene extraction in a laboratory far from my laboratory, so how to keep this vegetable matter in its fresh state for a period of 3 to 6 days at max.
Note: transportation is by plane .

You don't give us a lot of information but the short answer is to freeze your samples in liquid nitrogen and store at -80oC. Your samples should be fine for much longer than 3-6 days but one should be prudent and test the stability of your anaytes.

Cell structures have nothing to do with your ability to extract DNA, phytohormones or indeed to do enzyme assays. You could also consider, as mentioned above, drying your material. Freeze in liquid nitrogen and freeze-dry. Then store your material in a desiccator to keep it dry. Again you should do a comparative study to validate the process.
