InSAR is a technique that uses SAR images for a specific purpose, i.e. DEM generation. What you need is SAR images which stands for Synthetic Aperture Radar. There are some sensors in space now and I think only Sentinel-1 provides free data, which has a global coverage. You can access the data through this link:

You can search and download archive SAR data of ERS-1 & 2 and ENVISAT from EOLI-SA catalougue (https://earth.esa.int/web/guest/eoli). This data is free as well. I don't have enough information about the commercial SAR data but here are some websites that might be useful:

Now, I want to now the subsidence that happened in this area between the two images. What is the best way to do it? I never used inSAR before so any information about how to do that will be great.
Mohamed Gaber : InSAR is far from being a a trivial task, but you can try the attached tutorial using SNAP (free software). Hope that will be a good start for you.
