Is there any titration method for estimation of malic acid that may check the malolactic fermentation?
In malolactic fermentation (especially in wine), my experience is that malic acid is not detected even by HPLC. You may be able to quantitate lactic acid by titration. Confirm your results by HPLC.
Titrimetry is used to estimate malic and lactic acids volumetrically.
