If your evaporator can cope co-deposition of C60 and CuPc, then it should be fine. It very much depends on what device structure you plan to do. CuPc itself can be used for a hole transport layer. However it may not be efficient as some metal oxides. Bear in mind that CuPc films can absorb the blue region of light.

Firstly C60 is an electron dominiated materials. It is very often used for electron injection. Secondly, the energy levels of HOMO and LUMO are 5.55eV and 3.83eV. From energy alignment point view, it isn't good idea to do what you plan to do.
