I have to build for my final project an optical system for a 3U cubesat who will be on the LEO. The first 2U will use for the optical part and the last U will be for the electronical part. The goal is to have a resolution of 2.7m GSD. I only need to take pictures of the earth Can you help me with this or if an project like this already exists ?
Depends on costs. Cheapest solution - 90mm Maksutov telescope from the market. It is well suited to 3U formfactor, but 3m seems close to limit from LEO.
If you have a lot of money, try Hershel-like schemes without obscuration of aperture by secondary mirror. Like ALOS-3.

do you know how can i connect the Maksutov telescope to a CCD and which electronical components i have to use to get the image ?
A lot of off-the-shelf 90mm Maksutov are ready to couple with CCD or even sold with CCD preinstalled. Try Meade, Celestron and many other brands. Try to select item with the best interferogram and minimial diameter of secondary mirror. Independent movable secondary mirror is better.
CCD must be installed in focal plane of telescope - better with mechanical structure for calibration and positioning. But be aware - simple off-the-shelf Maksutov telescopes work only in RGB bands, NIR demands meniscus made from special materials, transparent in NIR.
