What is the accuracy of these images regarding their geo-referencing and how accurate are they for their use of known sites with control points for geo-referencing?
The accuracy is very good. The problem is that when exporting the images can suffer displacement, you must pay attention to this. It is a good alternative for illustration and export of maps, however I do not advise you to use these images for vectorization.
If I may, I would like to tell you OpenStreetMap for cases where you will do vectorization and production of data. That way you can vectorize the images via JOSM or via the OSM website itself and share your database with the entire scientific community. It is easy to intuitively vector maps on this platform. I particularly find it easier than in software like ArcGIS and QGIS.
Be mindful of the use and copyright issue in your work. The plugin is simply a link between the map service and the QGIS platform, however this does not mean that the use can not be subject to Copyritgh.
