Thank you Daniel Gregoire for your answer. I was interested in an academic review (not neccesarily related to a particular application such as those you mention) about all the explored posibilities for bacteria to accomplish fermentation. I was (and still I am) interested in a complete guide to all posible electron donors and acceptors within the organic molecules, hopefully associated with the functional genes and taxa for which they have been described. May I recommend checking the Brock, Microbiology textbook 13th edition if you can obtain a copy? The chapter on fermentation summarizes a number of common fermentation and contains the information you seek. I know there are some pdf copies available online, perhaps through an academic library, or I am sure you could purchase an e-book/hard copy for a modest price. Either way it is a good resource to have. I wish I could be of more help, best of luck.
