Hi, we use Wharton filter paper, press it with constant force and time on the surface and measure the lost weight. Then you can calculate the film thickness. We found out, that agar gels can have natural syneresis films of 10 to 100 microns depending on gel strength and compounds. This method is also used by food researchers ;-) Best regards, Andreas
