Ashley, we have recently published an updated version of the 1980's chapter on crustacean metabolism. The full-text is listed first on my profile. At the very list, our chapter show give you an idea of how aerobic and anaerobic metabolism are utilized in different environmental conditions in crustaceans. Hope it helps!
There are some papers that have established emipirical relationships for crustaceans in general. While not very precise, they will give you a good idea of metabolic rates. I am attaching a paper of mine on secondary production in mangrove fauna, check out the literature list, that may be of help as well.
