I'd dig into the yeast literature a bit. They've been doing that sort of thing for awhile now. It typically involves supplementing the media with specific fatty acids and/or substrates or targeting specific enzymatic pathways involved in fatty acid metabolism via drugs or genetics.

Yes. She is referring to altering the degree of saturation in the FA chains themselves
