I do not agree that an S-N curve for stainless steel will work as many grades of SS do not have a fatigue cut-off limit. They are not true "carbon" steels. You are unlikely to find a specific S-N curve for grade 12.9 bolts so I suggest you use a typical S-N curve for high tensile steel. In my view, how you model the dynamics of the applied stress will be much more important than any subtle differences in the steel properties.
