you could always check out www.coursera.org, they offer nice lectures about bioinformatics and systems biology.

The problem is that  lectures cannot give you publications... or knowleadge you can actually demonstrate. Thx anyway! :-)

Consider your current knowledge .. tomato, I guess .. and then see if there is some bioinformatics heavy group working in the area of plant biology. Contact that group leader and see if there is a chance for a postdoc or an EMBO funded postdoc, etc.

The important thing is you need to be proactive and find the group which publishes often and high and needs your expertise so that they in-turn train you.
