In thermodynamics, it is known that residual properties show how much a mixture deviates from the ideal state. Do we have other criteria for this? Do we have any criteria by which we can recognize how much a liquid-vapor or liquid-liquid interface is nonideal (deviates from the ideal state)?

I think one of the most important parameters is the accentric factor. If the acentric factor of pure compounds is very close to zero then we can say the mixture behaviour also will be close to ideal (Suppose He and Ne mixtures).
Also another parameter is the interaction between compounds. Less interaction means the ideal solution.

As you know, the residual properties result from comparing a real gas and its perfect state: both at the same temperature and pressure conditions. I think that, you first need to clarify some situations for your perfect interface. Because, the interface conditions are a product of interaction between two fluids, i think, your definition for a perfect interface could contain activity coefficient, fugacity coefficient and/or some new defined parameters.
