Designing a summer school program is challenging since we always need to ensure the quality and making learning easier & fun. Let's discuss the different teaching methods can be used for a Summer School program at Bachelor Level.
Example: One of the teaching methods is 'Assigning group projects to the participants based on lessons taught in a Summer School'
I believe dividing students into groups and giving them research topics and then they would deliver presentations according to certain criteria will be a good method. It certainly allows for maximum learners' autonomy, improves team work dynamics, enhances learners' presentation skills. And most importantly, it is fun.

Problem-based learning (PBL) is a method of learning and teaching which allows students to focus on how and what they will learn. An unfamiliar problem, situation or task is presented to the students (by the lecturer or tutor) and students are required to determine for themselves how they will go about solving the problem. This usually occurs through small group work and allows students to utilise their prior knowledge in the topic area and identify the gaps in their knowledge as they attempt to solve the problem.
PBL is a student-centred approach to learning that encourages students to be self-directed, interdependent and independent as they attempt to solve the set problem.

I also believe group projects are a way to go here. I would recommend to also include a more "funny" and ice breaking task in the beginning. E.g. in a summer school I attended, the first task we got as a group was to build the highest tower out of spaghettis. It was a lot of fun and it had somewhat of a connection to the first topic.
Otherwise I can recommend PBL, as mentioned before, scenario-playthroughs, role-playing and loose elements of gamification. E.g. make use of an app to let students answer questions via their smartphones (like Kahoot) or prepare quizzes in beforehand (like Quizlet).
In addition, I can say that I always enjoyed group discussions where the group had to come up with their summary to a topic and then summaries where compared.
You can also use the principle of flipped classroom (students prepare for example materials in an extended or more flexible break and e.g. have to present their outcomes later on to others).
If in your course you need to let your students structure anything, card-sorting can be fun and produces interesting results.
And of course: any form of real-/field-/user-/ testing can give the students hands-on experience and foster learning through experiential learning (Kolb).
