The question depicts the intuition to take gravity as the variable. In other words, say that if we take gravity as the fifth dimension of the model of the universe (instead of considering one of the fundamental forces of nature), which is independent of spatial and temporal dimensions, then what inconsistency and instability will arise in theory and in mathematical description?
The short answer is No. And it suffices to work out what the statement means, to understand that it's wrong. Gravity is a force like any other, in the Newtonian approximation. And it acts on objects that move in three space and one time dimension. So one is looking for a description that reduces to that in the non-relativistic approximation. So one writes how to describe the motion of relativistic objects, that move in spacetime, not space and time separately. And one can discover that one can take into account the effects of extrtnal forces by replacing the flat metric of spacetime by a curved metric. And that this approach is consistent, because it allows recovering Newtonian gravity in the non-relativistic limit.

Shortly: No! Gravity is a local phenomenon, It is connected to the state of first-order matter, which is electromagnetic in nature, but which is different from the the ordinary matter surrounding us.
