I am going to extract the oil from the fruit of genre Quercus, I want to know is that the drying of the fruit before the extraction can affect the quality of the oil to be extracted and which is the best mode of drying which you can propose

You may use freeze drying, be sure Oily seeds usually possesses low water owing to hydrophobic forces, drying them will exposed the oil to oxidation, besides water slightly mixed with oil in the extract
Oil quality not affected if you used low temperature. You can try de-moisturized by drying seeds in an oven under vacuum at 40-50 Celsius degree for 24-36 h according to moisture content of seeds before extraction of oil.

There are handful options available as drying pre-treatment before oil extraction. Routinely used, among others, are mentioned below.
1. Conventional hot air oven drying (perform at < 50 C)/ Vacuum drying.
2. Microwave drying (rapid and uniform).
3. Cryogenic drying/ freeze drying.
Check for resource best available at your end!
Your yield is sometimes depent on the drying method u employ....I will advice you try 4 drying methods and compare their yields this will give you a quantitative picture of what to expect.. Thats the beauty of research...You can still try sundrying method....
The yield depends on pre-treatment drying of fruits but in order to know the best drying method for your yield and the one suitable for your targetted active compound, please try several drying methods e.g. vacuum-oven drying (
