NASA has a series of posture-specific inertial tables that describe inertial parameters of different body parts as well as the whole body. It is, however, very specific to certain postures like: seated, reclined etc. I don't have the reference immediately available, but if you are interested I might be able to find it.
Sorry for the delay. Unfortunately, I don't have the material anymore. I was able to find it originally in my institution's library, so you might want to start there. The data were from the 1960s I think, and they were not digitally available when I checked... only hardcopies.
Dempster works surprisingly well for a wide range of body types. More accurate estimates have attempted to define certain body types, but even with DEXA and a three component mass model (fat, muscle, bone) the estimates have not been much better. Dempster did a HUGE amount of work, and his report is 20MB
