The pitot tube can obtain the dynamic pressure by measuring the total pressure and static pressure, thus obtaining the average wind velocity.
Then my question is: whether the time history of dynamic pressure measured by pitot tube (assuming the sampling frequency is high enough) can be used to accurately estimate the wind pressure fluctuation and wind spectrum, or will there be some problems？

You can't use a standard pitot tube to measure time-dependent pressures when the pressure changes rapidly. If you do, you will get a time varying-signal, but such a signal will not be a proper representation of the pressure. The pitot tube equation, which you rely on to translate the pitot tube signal into pressure, assumes steady flow.
