I want +carry out some susceptibility tests of different bacterial species and was wondering if you could substitute the beef-infusion by meat extract. Or if the two things are the same anyway? What´s the difference between meat-extract and meat-infusion (as the second is an aqueous extract)?
For determination of antimicrobial susceptibility, you have to follow strictly CLSI guidelines. Commercially produced Muller Hinton Agar is recommended by CLSI. So, it cannot be replaced by any other agar medium.

As far as performing Bauer Kirby method of disc diffusion you have to follow NCCLS or similar International Standard protocol to determine antimicrobial susceptibility, you do need to use what is described. It is even better to obtain a commercially produced Muller Hinton Agar plates so that it meets the expected guidelines as to pH, thickness etc. Commercial MH agar plates are certified so there would no question as to acceptability in clinical setting.

I have ordered a MH-Broth now as we need to meet the CLSI standard.
As you will be making up your plates using agar in MH-broth, you should perform the Quality Control studies using four ATCC strains i.e., Staphylococcus aureus, E. coli, Pseudomonas aeruginosa and Enterococcus fecalis with known ranges of zones of inhibition.

Every company that makes MH has to do the quality control using the ATCC strains before they could sell in USA. If one is planning to make their own using either beef infusion or meat extract, then QC is absolutely needed. Only then data generated could be compared. If you pour plates then one has to make sure the thickness is uniform and meets the QC requirement.
The standardarized processes have to carry out as the international protocols with the aim to have comparable and confident results. Please see the components, concentrations and every characteristic that beef infusion and meat extract have. You can have your own conclusions.
