I want to compare the activities of two phytochemicals on the mucosal immunity.I am planing to use stomach gavage of the chemicals in mice.

Yes you can determine the dose according to previous studies , and if it is new therapy so pilot study is needed.

You can use histopathology as a tool for mucosal continuity and abscence of infiltrations.

Also you can use homogenizer to determine the oxidative stress in the diseasesd organs
