IoT devices needs a set of communication protocols at different layers such as at the network layer (e.g. IPv4, IPv6), transport layer (e.g. TCP, UDP) and application layer (CoAP, HTTP, MQTT). My question is related to the maximum number of protocols supported at application layer?

I agree with Anatol's answer. But it's a definite challenge to have a generalized framework for all the IoT layers such as sensing, network, cloud, and application.

an IoT device with the 6LoWPAN protocol can support several application protocols (CoAP, MQTT, ...) according to the same principle as is implemented in every computer with the IP protocol.

Yes, I agree with Anatol Badach answer. At application layer (of TCP/IP stack) your IoT device can use any application layer protocol. The lower layer (IP and MAC /Link) encapsulates data and do framing based on underlying communication link.
