If you want to quantifying the leaf color for detailed approach. Try to take a digital photo of your leaf and read RGB value of the leaf color, after that convert the RBG value to DGCI (Dark Green Color Intensity).
Better to follow already established color schemes for better understanding of readers. to develop your own color scheme lot of data and then its recognition by other will be required so that latter the readers could benefit from it.
If you're looking for a very simple scale, there's one in the range green to yellow for the background (non-flush) colour of apples as they approach maturity. Whether it could be used for grasses is another matter.
It is always better to use a known and recognized colour scale for research purpose. I suggest to use Royal Horticulture Society(RHS) colour chart for colour characterization of any plant part.
