You can use hematoxylin without eosine actually as you only need to stain nuclei. As long as your object of interest visible in sufficient detail why not. Science doesn't really have a strict set of rules, you can use any scientifically meaningful resources to answer your scientific question. Another approach to stain nuclei would be to use DAB staining with histone antibody.
