Badi H Baltagi has a few article on SEM. You can try his Econometric analysis with panel data. It was frequently referred while I was in Sheffield.

Statistics without Math for psychologist.
Basically all newly published books on research methods and statisitics provide good guidelines to use SPSS for each statistical procedure in question
