We're working on acido-resistance heat induced in microroganismes and in our experiments we isolate frequently yeast, can any one havean idea or a related publication on this phenomenon in yeasts and molds ?
In response to environmental stress (like heat, changes in osmolarity, oxidative stress etc.,), yeast is known to induce stress genes, which protects them against other stresses. So if you look up papers in the field of acquired stress resistance or acquired stress tolerance, you may stumble upon the exact relationship (heat to acid) you are asking questions about.
