It really depends on the context of the project. Different ontologies are applied for different context. To be specific, for a project in learning context, one possibility could be finding similar learning objects or courses in same/different domains. In some cases, ontology can be used for connecting the courses or even enriching the learning materials. In the application level, a program reads the ontology and follows its logic to explore, search and navigate the learning portal. Another program, can use the ontology to find similarities between courses in order to link them to useful information on the Web.
