I assume you are referring to de novo sequencing by mass spectrometry? If so, I would recommend the following book: M. Kinter, N.E. Sherman, Protein sequencing and identification using tandem mass spectrometry, John Wiley and Sons, 2000.

Specifically, Chapter 4.

It has a great explanation of how MS/MS sequencing is performed and takes you through de novo examples.
