Here are my comments；

1. Not so much difference for spring types in the coin cell; Au coating will reduce the internal/contact resistance;

2. Don't suggest to use Ni foam to replace springs. Reason 1, it's hard to control the internal pressure by Ni foam (actually it is softer than commonly used springs). 2. If your sample is not directly coated on Ni foam, you probably still need to use spacers to give a rigid support for your working electrode. 3. Side reactions on Ni foam. First, you need to make sure it's clean. It's hard to avoid NiO in the porous structure. SEI is likely to form/decomposition on NiO/Ni due to the catalytic effect of the transition metal. Whether the reaction will happen is hard to decide based on your full cell voltage, since don't know the voltage profile of your cathode material. However, the voltage window is pretty aggressive for your electrolyte. Most of the time, you can start with 3.0~4.3 V, then try to use CV test to decide your maximum voltage window.

3. It's hard to provide such information in review papers or books. Your test methods (rate, cycle number etc), test environment (temperature, electrolyte composition, water and O2 content), materials (electrode materials, electrolyte salt, solvent, and additives). As Dr. Braun suggested, try to do it first, then you will learn a lot. Come to ask again if you have some more detailed questions.

1. In my opinion, the reason for using a rigid spacer is to avoid the deformation of thin copper current collector on which the active material is deposited. Spacer, evenly distribute the force applied by the spring, otherwise the uneven force of spring might produce cracks inside the active electrode material. if your current collector, in your case nickel, is rigid enough you might not need a spacer. 

2. I would like to disagree with Chen because Nickel is a suitable current collectors for anode side. Moreover, for LIB the working potential for anode is ~0.5 to 2.5 and for cathode is ~3-4.7. Why? Because anode current  Cu (0.337 V wrt Hydrogen and 2.7 V against lithium) is stable till 2.7 V against lithium. Similarly, the oxidation potential of Ni is -0.25 V vs Hydrogen and 3.54 V against lithium, therefore it wont oxidised til 3.54 V against lithium. Even if they dont oxidise there is a possibility of alloying with lithium, but as far as I know lihtium does not alloy with nickel in the range of 0.1 to 3.54 V. 

On the cathode side,  Al (1.662 V wrt Hydrogen and 4.7 V against Lithium) is selected as a current collector because  oxidation potential wrt Li is ~4.7. So it wont oxidise from 0 to 4.7. But still we dont use aluminium on the anode side. Why? Indeed, it does not oxidise in this range,  but it starts alloying with lithium at lower voltages. So not suitable on anode side.  As far as I know Nickel does not alloy with  lithium in the range give above, so its safe to use nickel as a current collector. The reason why people dont use it lies in the cost of nickel.  

Finally, the problem of SEI formation, mentioned by Chen, is not a problem of current collector, it will happen even on copper and steel current collector.

Everything is good, but you forget "minus"! The Aluminium potential is -1.66 V vs H2 only 1.4 V vs Li, and according to thermodynamics Al should react. Al used as cathode current collector only because of surface protect layer , mostly Al2O3. On the clean Al surface this layer spontaneous growing during seconds up to 10 nm and then continue more slowly. In batteries sometimes this layer is also growing and increasing internal resistance. This is reason why the Al foil coated with carbon protecting layer is popular.

In my opinion, the CR2032 coin cell (as well as other sizes) is not a good test design. Although many use it (I, along with my colleagues, also walked this path). First, because you don’t see how the cell is assembled, and after work it’s quite difficult to disassemble it to see what’s wrong there ... (it is extremely rarely good). The most important thing is that there is never any certainty that the electrodes are laid well (and not pinched, and even less so). It is much better to use a collapsible test cell, it is better if it is designed by a specialist who has been working with lithium and lithium-ion electrochemical cells for quite a long time.

Then you can experiment with the material of the substrates, body, etc. - everything will be visible after the experiment.
