Seems interesting, while u can use aluminium hydride or lithium aluminium hydride, instead of these u are using tomato as reducing agent, i dont know it will work or not but if its working then by tlc only u can identify reaction completion and product formation.

In this reaction main thing is activation of carbonyl group, if its activated then sure reaction is complete.

for easy way to determine reaction completion, you can take tlc plate and put three spot at baseline, 1st is of your starting material at left side ,2nd is of final product or reaction mixture at right side and 3rd is co-spot on co-spot u put both starting and final , after running u compare your starting and final spots, if starting material spot still is there on final spot then let is run the reaction until u get the single spot or disappear the starting material spot.

and why we are using TLC for reaction completion just for cost reduction and to promote green chemistry, by HPLC also we can get reaction completion but its costly for each test, so better first check by tlc then by HPLC.
