Not sure what you mean by "service design." Are you referring to delivery of medical services, such as in the ER/OR? Are you referring to post-op patient care? Please clarify.
Agree with teh above answers. One thing I would say very strongly is that the service and medical pattern must be designed toether with the environment. There are now literally thousands of publications about the impact of archtiectural design on healthcare provision. If this is new to you you will find many papers of mine listed in here and their references will in turn take you on a long and highly profitable journey.
I am looking into delivery of medical services such as frequent assessment on a particular medical condition and sharing activity data of older subjects with healthcare professional, and get emergency help when subject requires immediate attention. I agree with Bryan that these services are context dependent, so it is rather important part to study the context where service is to be provided.
