Are there studies on how various ways of visualizing impact assessments (SEAs or EIAs) affect how the results are percieved? By various ways, I mean for example using set numerical values (-3 +3) or colour gradients (dark red dark green) describing value, impact and consequence as opposed to just plain text.

All articles I have read are not primarily intended to analyze how visual impact of the results of environmental impact assessment has. However, I advise you to filter through the articles the best forms of visual disclosure and that is best for your goals. When it comes to books, some have different forms and methods but are not very specific.

To clarify further, I was talking about studies looking into how individuals such as politicians or stakeholders perceive the results of an impact assessment when it is portrayed through clear-cut categories such as "low-medium-high" or numerical ordinal scales, as opposed to longer, more thorough text descriptions where the understanding underpinning decisions might be more evident.
My immediate thought is that use of the former gives the assessment a more "scientific" appearance that on the surface might enhance the legitimacy of the assessment, despite the fact that these values might very well be based on the discretion of the planning practitioner.
this sounds like a basic side of semiotics and marketing. I suppose what you really want is to tune your colour scheme and shapes to the tone you want to communicate it in. In my own reports and design schedules I often ask for assistance as I feel I am weak in my colour theory. I can say with a great deal of confidence that infographics that balance aesthetic interest with clarity of message and seriousness have been well received more often than not and honestly in our environment of digital medium communication it helps with peoples badly reduced reading focus.
