I found this papar to be a good reference on the subject you mentioned. However it is in Portuguese. If you could translate it or get in touch with the author for an english version, I am sure it would be useful. Also, this author has other publications regarding woman and ethnic groups in tourism, specially Islam.
I have just co-authored a paper in press at the Journal of Sustainable Tourism on this general topic set in the indigenous community of Sagada Province (the Kankana-ey people), Philippines. I have posted the pre-publication proof on ResearchGate (see link below).
