After starting my CFD life using meshless methods I am now expanding my horizon and I have started work on a code that works with structured curvilinear grids.
The group that built the code is using Pointwise to create their meshes. The only alternative that I've found so far is GridPro which, albeit commercial, has a free (limited) version for academics.
However, as an advocate for free-software, I'd love to have an open-source meshing software that would allow me to create structured curvilinear grids. My initial search didn't yield any results, so as my meshing knowledge is a bit limited, I'd be very glad if somebody could point me towards such a software and, if available, corresponding tutorials.

You could try gmsh. I use it for unstructured meshing, but it also handles hex meshes. It has a good documentation and the mailing list is very active. It is definitely worth a try.

I second Gmsh. It is a very nice implementation, documentation is accessible and it is quite powerful. Cheers
You could also try "triangle". Easy to implement and I know few oceanogrpahic studies with grids that are based on it. It generates exact Delaunay triangulations, constrained Delaunay triangulations, conforming Delaunay triangulations, Voronoi diagrams, and high-quality triangular meshes. The latter can be generated with no small or large angles, and are thus suitable for finite element analysis.

There is also a survey available from Steve Owen (http://ima.udg.edu/~sellares/ComGeo/OwenSurv.pdf). He fomerly had a website with informations on all the meshing codes around, but I don't know where it is gone (the original link doesn't work anymore).

you can use Hex-Wedge mesh and choose source face or use Tet-hybrid and change spacing depend on your question.
I have done a little grid generation with Salome ( www.Salome-platform.org) which can use gmsh, tetgen of netgen as the grid-generators. It includes OpenCascade for geometry definition. It may be difficult to get a structured grid out but it can do unstructured hex grids.
SnappyHexMesh which is part of OpenFOAM (www.openfoam.com) may also be a good choice. It can take a at least a STL geometry as input.

it can generate an overlapping grid for your own solver. It has geometry, CAD and grid generation capabilities.
