Is the combination of them which gives the characteristic smell or they act separatly. For example coumarin gives the smell of fresh cut grass

All the volatile secondary metabolites contribute to the characteristic smell of a plant. In particular the components of the essential oil.
Mostly terpenes and sesquiterpenes,monoterpenes are responsible for the presence of essentialoils.
