I am confused and need help to get out of the mental block i am in. I am looking at scattering in solutions. In one case i have laser dyes in ethanol and also solution with liquid crystal as solvents.
When we talk of scattering, they usually discuss about spherical particles and also they are separate? how to treat this scattering which is happening in bulk solution and also may be of irregular shape instead of spherical?

There are lots of works on scattering from liquid crystals -google scholar quickly finds multiple books. I suspect that in both your systems all the structures and correlations are much shorter than the wavelength of light. In this case there is a simple formula that relates the scattering to the fourier transform of the fluctuations in the dielectric constant of the medium. If, as in your case, the particles are not spherical, you need (mostly) to remember that the dielectric constant is a second rank tensor so that the fourier transform is a fourth rank tensor. This means (roughly) that the polarization of the incoming and scattered light both matter and "depolarized" scattering is important. There are lots of works about this, including books, over the last (I suppose) half century.
