The more you have water in your extract, the less the extract wil remain stable. Whatever the concentration of ethanol is, it is more suitable to store it in cool (preferably negative) temperature. Alternatively, the extract may be freeze-dried if to be stored for a long time.

you could store your alcoholic extract of proline and sugars for weeks at a temperature of -18 C.we have used this procedure to store alcoholic extracts of amino acids , sugar s and plant hormones for at least 8 weeks.
