I'm doing a simulation where a person sits on a cushion, and the variable of interest in that simulation is the pressure (CPRESS) on the cushion. I performed several simulations with different mesh sizes and observed that the result varies significantly. The cushion is rubber with 400x400x4mm, and I tried the following mesh configurations:
4mm, 5mm, 7mm, 10mm, 16mm and 20mm, for all cases there were significant variations (+ -10 Mpa approx).
Anyway, how can I know what the ideal mesh size is?

In principle, results should converge if you increase mesh density. If they do not, your element type might be wrong.

I think it is convenient to have a physical test to calibrate your numerical model. This test will serve as the calibration and validation pattern of your model. This way you can quantify the error with greater accuracy.
It is assumed that at higher mesh density, the interpolation of the displacement field is better, but remembers that the numerical method is approximate and many times you need to have a calibration pattern. That way you will know which the best finite element is and which will be the best mesh density for that finite element.
My suggestion is to make a selection of the finite element type (testing different types in your model) and then perform a mesh density analysis for the previously selected element. All of the above should be done taking as reference a physical test.
I believe that only you will be able to know the ideal element and the ideal mesh density if you perform an adequate calibration taking into account a physical test.
