Would anyone recommend me a tutorial on Single-Cell Analysis? I would like to understand the concepts so that I can process the files, generate 2d embeddings with dimensionality reduction and interpret them.

There is a scRNA-seq Analysis tutorial by https://github.com/hemberg-lab. Nicely explained, it goes from basic to moderately advanced stages of analysis. You might end finding more, but I have personally learned a lot from it, so I recommend you this.
