We are conducting a longitudinal study and collect various biological samples. We have been adding ascorbic acid to a fraction of our urine samples that are then stored at -70C. I know it interferes with some assays, but is it useful for stabilizing other factors or for other assays?
Agreed! It is a common and cheap antioxidant. It will be reduced 1st before your analyte.
Indeed! Ascorbic acid has pro-antioxidant activity resulting from the reduction of metal ions and the Fenton reaction. But I don't prefer to use it in my research. Although it considers the most known water soluble antioxidant, it is very weak especially in aqueous solution, and when being oxidised, it turns the solution into coloured solution (definitely orange or yellow) due to the formation of dehydroascorbic acid.

But I was talking about water-soluble vitamins that exhibit anti-oxidant activity. In case of water-soluble vitamins, there's only one vitamins that has anti-oxidant activity and this one is Ascorbic acid.
Indeed! all oil-soluble vitamins exhibit anti-oxidant activity including D,E,K, and A not just E. But Vit. E shows the highest anti-oxidant activity.
In my case, I prefer using other water-soluble anti-oxidants such as sodium meta bisulfite ... etc
