Boiling your water does a lot of things to the molecules within. Firstly, boiling causes precipitation of calcium, magnesium and other metals. Also, the dissolved oxygen will be near zero. Unsure what causes the loss of taste but has to be one of these things. Leaving water or boiling it for longer gets rid of chloride which will definitely alter taste, but unsure if a short boil will remove this.
