I don't know about goat....but Rat is a good model because the aldose reductase inhibition pathway involve in both cataract and diabetes.
So, if you are doing study on diabetic complication then it is easy to evaluate cataract and streptozotocin induced diabetes in rat.
The other animal model are also used like chicken for in vitro study.
