In all the literature I've read, I always find Au and Ag as metals for surface plasmon resonance photocatalysis. Why are other metals never used?
One option I've considered is that other metals oxidise and cannot remain in metallic form to act as a photocatalyst, but then, why do we never see Pt SPR for example?

Platinum nanoparticles exhibit plasmon resonance in the UV range of about 215 nm. See the discussion on this in the link. There are correct answers.

In the literature you can find also plasmonic photocatalysis with Pt or Pd nanoparticles, although SPR bands of these metals lies in UV range as mentioned also by Yuri Mirgorod .
Silver and gold are used most often, due to the strong SPR in the visible light range, and achieving photocatalytic activity in this range is one of the main goals in the field of photocatalysis. Actually, for tuning the SPR band position and photocatalytic response of material, bimetallic nanoparticles are also used.
Metals like Pt, Pd, Ru etc. are advantageous rather in hydrogenation or reduction reactions or they are used only as the electron acceptors in heterogenous photocatalysis and are not usually considered plasmonic structures. To the best of my knowledge, oxidation of these metals (except for silver) is rather unlikely under photocatalytic processes conditions.
Au and Ag nanoparticles can be formed to absorb visible spectrum efficiently that's why its commonly used photocatalysts.
