I think that the drinking coffee or tea at morning became part of the tasks performed by a person every day.
I think it is just normal thing for people to take coffee or tea in the morning but some take it because of their weather

I wouldn't survive without my morning coffee.
As much as I am an early bird, I find it difficult to the rapid adaptation to the modern life strain, as the traffic lines, the students' noisy crowd, and the difficult subject that I teach, and I have to rapidly adapt to a more alert state. The stimulating effect of coffee or tea, helps me adapt in a quicker time, to the alert motion that I need.
I wouldn't ever take coffee or tea after 3 pm. ( I don't adapt to the 5 o'clock tea, to avoid that stimulating effect of xanthines ).
The human body needs liquid and some nutrition, in the morning, after a long night. However, instead of water, milk, or any natural substance, coffee or tea is taken, I think, more as a habit and an addiction.

Drinking tea or coffee is first experiment, than if you had the experience, how it can help to wake up, it will develop to habit. So a lot of people still drink their morning caffeine even with bad results like high heart rate, tremor and problems with the stomach. Some times we are "relearning" very slowly.
Coffee is a stimulant, and gets your brain going. It's full of anti-oxidants as well. There is an interesting calculation in 'The Physics of Consciousness' by Evan Harris Walker of how long a cup of coffee will put off the onset of sleepiness, based on the quantum physics of synaptic firings in the brain.

I also love the taste and smell. I have grown accustomed to mixing several blends of freshly ground coffee beans, and to make the mixtures with several different proportions, according to situations. It has a certain kind of magic in itself.
And I wouldn't mind the promise of a close encounter with the beautiful George Clooney, I must admit I don't much care for ready made capsules of Nespresso... Not for me. I'd much rather prefer to invite the man for a taste of my personalised home-made fresh magic coffee.

It is custom and its result: a bit of addiction. Let me say that we, Argentinians --and our Uruguayans neighbors, of course-- drink mate at morning, evening or any time. Coffee and tea are also in our diet, but mate is the widespread preferred infusion (also in Paraguay and south of Brazil).

I'm a freak of coffee-brewing apparatuses because they are usually weird: I have a Breville expresso machine that is awesome, and a french press, and a couple of "Grecas", and a "sock", which is native to us. We got the first two coffee shrubs directly from the Paris Jardin des Plantes. King Louis XIV received from Arab diplomats a gift: two small coffee shrubs. Eventually, a French aristocrat who was headed for the Caribbean asked the king to give him two little coffee plants, offsprings of the first two, and the King said yes. During the Atlantic crossing the ship could not stop to get fresh water, so the Frenchman had to forego his own to water the little trees, which got alive and well to Puerto Rico in early 18th century. It spread across our small island in a few years, and then we started to drink coffee with enthusiasm, some 300 years ago.
Puerto Rican roast is among the best coffees ever. I am so grateful for my coffee. We have more than 500 hundred "boutique" plantations, all protected by trees from direct sunlight (it affects the aroma and the taste of coffee), in smallish coffee forests. I travel the island in search of new or unknown brands and always have my fridge full with a few pounds and I like ti grind it myself. Coffee is my homeland, the aroma, the flavourful mouthful in the morning, the nice aroma in midafternoon under my bougainvilleas.
For Puerto Ricans it is not a custom, it's a tradition. Oh, my friends. Coffee is my life. :-)

Although I cannot find it now, I recently read a study where they monitored people's brain while they smelled and drank coffee. They found no correlation between increased brain wave activity and the smell or consumption of coffee, thus assuming a placebo effect. I think they forgot to plug the recording equipment in!

The Arab diplomats must have brought the coffee from Ethiopia, where the original plant is still there but diminishing rapidly in abundance.
Coffee and tea are certainly stimulants, but keep some people awake at night. Nice to have, but not a necessity. I think people think they cannot function without coffee, but this is just because of the habit of making the drink, not so much the content.
Very interesting reason . Tea and coffee is most preferred in the morning , one of the simplest reasons that comes to my mind , is the rejuvenation of your system through antioxidant/stimulator after having deep sleep of 5-6 hours. Just to give a nice metabolic fillip to the system .
At the beginning people are motivated by the "stimulant" properties of coffee and tea and/or the antioxidant properties of tea. But further it become an addiction/habit to parents who transmit it to children. And finally it become a culture.
The drawback in this situation is that food industries take the opportunity to sell everything and anything and people continue to consume without worrying about the quality. We should be aware of what we drink!
But ultimately, there is nothing most stimulant than water in the morning.

Well mostly tea and coffee are integral part of breakfast due to addiction. I have used both several times and have a slight bias towards tea due to it being more prevalent in the subcontinent.
Both the beverages have been tremendously important in the literary and religious circles. In Islamic history the gathering or a school formed by the spiritual masters are known as (khan-qah) in persian. This comes from the word Khana-e-Qah or the house of brew(coffee seeds traditionally). They used it mostly due to its ability to cut sleep.
Tea and coffee have a drug named caffeine, which relaxes the mind and if body receives the amount required than people feel relax and active.
In Iran where I am originally from, tea is more common than coffee. I think that drinking tea or coffee is a custom. However, since this custom has always been practiced, it has become a habit in people.
Some do not actually like to eat early in the morning. So, they prefer taking something that is very light. Meanwhile, some are too busy to take breakfast.
The morning cup of tea rejuvenates the in-between time when the person is half awake. It wakes him up (fully) ready to take on the day. I enjoy reading newspaper with the morning cuppa.

Tea, among other mineral, has aluminum. Tea has almost a neutral pH (6.5). Lemon has a pH of 2, very acidic. Having those together may cause the aluminum staying in one's body and cause health problems. So, I would think juice before considering having such a great taste.

Some learn to drink coffee, some learn to drink tea and they become part of our daily lives. Just like your dessert after dinner. (why do we eat dessert AFTER dinner and NOT before?.. because we learned it that way ..same goes for your morning or evening coffee!

Why are people drinking coffee or tea at morning?
Think this practice is subjective to different people according to their needs or preferences albeit there are benefits of drinking coffee & tea (see 2 links below). Switching from drinking coffee to tea can happen also after a while e,g, to be more health conscious / upon doctor advice etc. Some people are more flexible i.e without coffee they can switch to tea for a particular morning etc. Also some people only prefer to drink juices, plain water etc.

You did not mention yerba mate. It is high in caffeine and supposedly has many health benefits. I have been drinking what is called yaupon tea, or black drink, for decades and prefer it to chai. Iced, it has a better flavor than chai and I find that little if any sweetener is necessary. Brewed strong, hot yaupon tea can compete with coffee as a morning refresher. It once was marketed to Europe, where it was preferred over chai, and was used as a tea and coffee substitute during the U.S. Civil War period. In addition, I can step out my back door and harvest enough in 20 minutes to last me 5 years. Below is an excerpt from a paper of mine that is scheduled to be published later this year.
"Currently, Ilex vomitoria and other Ilex species constitute the number three caffeinated beverage source in the world. A lot of this is marketed as yerba mate tea and is sold in leaf form in naturalist and health food stores. Though technically yerba mate is Ilex paraguariensis, it also can refer to Ilex vomitoria and Ilex cassine. In 1936 Argentina exported 18,239 kilograms (20.1 tons) of yerba mate (Ilex paraguariensis) to the United States (Folch 2010:26). By 2007 the United States imported 75,296 kilograms (83 tons) of the herb from Argentina, or one-fifth of all yerba mate exported out of the country (Wainwright and Putz 2010:6). Interestingly, Wainwright and Putz (2010) noted in blind taste tests that test subjects preferred yaupon tea over yerba mate. This preference, however, changed when test subjects were told that they were drinking Ilex vomitoria and Ilex paraguariensis, thus showing the power of perception in a name. It is my personal view. I agree with colleagues who indicates that coffee is as a catalyst for their performance in the morning. I drink a cup of coffee every morning, of course after the breakfast as it was described by Dr. Beata to anticipate the stomach acid (Gastroesophageal Reflux Disease) because I have the problem in the 20 years old. The habit has been starting since years ago, when my mother gave me coffee in 16 years old following my family culture. In regard to Dr. M. I. Khan's opinion above, I am also agree that it is more as a habit and an addiction when I observe my children. They may dislike to drink coffee, if drinking coffee is prohibited.

Cafeine mixed with pure fresh lemon juice is certainly the best medication for instant relief of migraine.
No pill would supplant the instant relief of a stong expresso double coffee with a few drops of lemon juice. (I'm a medical practitioner, and I suffer from strong migraine. This is the only medication I take for my headaches. I wouldn't care what effect on the stomach...)

Normally peoples have habit or may be addiction. I think it stimulate our nervous system and gave the feeling of awaken and more freshness and one can come out of dizziness.

A dram of blackness so strong that it would rival Puerto Rican coffee. A communal spoon quickly stirred and placed in a glass of water, as if to prevent the coffee from corroding the spoon. A sugar cube often dropped into the tiny cup, only to still be present at the bottom and sucked down with the last drop.

In southern states of India (notably in Tamil Nadu, Karnataka, Kerala, Andhra Pradesh etc) it is not only the morning time but almost throughout the day majority of population enjoy their coffee. It is the filter coffee and not instant coffee. If you are used to a taste and flavor of a filter coffee then you would hardly go for instant coffee such as Nescafe or any other brand for that matter. Because instant coffee is such a poor substitute for a strong cup of freshly roasted filtered coffee which comes from the optimum mixture of Coffee arabica and Coffee robusta with or without addition of chicory. It is generally added with lot of sugar and little of fresh milk. Ideally buffalo milk, rich in fat is preferred over to cow milk. Similar coffee is also available in few select south Indian (Udipi) restaurants in Bombay (Matunga, Mumbai).

Despite of this if we take more times naturally its bad for health. So people always to
take as per requirement of minimum times is quite good enough in my knowlege.

Thus children are given cocoa based beverage (generally a proprietary beverage such as Bournvita or similar type) along with milk.
